After harvesting, the cherries are washed thoroughly for fermentation and only the red, ripe cherries are picked.
The selected coffee cherries are placed in a plastic tank at 22 degrees Celsius and go through an oxidation process (exposure to air) for 48 hours, then anaerobic fermentation is carried out at 16-18 degrees Celsius for 12 hours. After anaerobic fermentation, the coffee goes through an oxidation process again for 12 hours after removing the pulp of the coffee cherry, then immersion fermentation for 8 hours at 28 degrees Celsius together with the liquid Mosto produced from the previous fermentation process, and then fermentation is completed by applying a heat shock at 65-70 degrees Celsius.
After fermentation, the coffees are dried in a greenhouse at a maximum temperature of 30 degrees Celsius, maintained at an average of 18°C to 24°C, until the humidity reaches 11%.

Jose Uribe Lasso was able to buy a farm with the money he saved from working in the coffee industry for several years.
The farm wasn't that big or impressive, but it was the first farm he'd ever owned.
Jose Uribe Lasso, who had worked hard to obtain the farm he had longed for, was eager to grow and produce coffee for his family. He named the farm 'El Triunfo', which literally means 'the victory', as a reward for his efforts.
At this time, Jose Uribe Lasso did not know that his two sons, Nestor and Adrian, would become the future coffee farmers of Colombia in a few years. They were Nestor Lasso and Adrian Lasso of El Diviso farm. After El Diviso, the Lasso family decided to expand their land to increase the production of new specialty coffee varieties and purchased a new farm. This new farm was named 'El Triunfo' after their father's first farm.

' Typica Mejorado'
Typica is a delicate and high-cup quality variety, but it is not easy to cultivate because of its low productivity and weak vitality. Many farms have given up producing Typica coffee and replaced it with highly productive and strong varieties, but on the other hand, there has been a movement to maintain the Typica variety. Typica Mehorado is a variety created through the efforts of those who pursued high-quality coffee rather than pursuing productivity. As a result of selecting and crossbreeding sturdy Typica trees so that the Typica variety could continue to be cultivated, the Typica Mehorado variety emerged, which maintains the quality of the Typica variety but has improved vitality. The name Typica Mehorado, which means 'improved Typica', contains the background of the variety's creation.
However, genetic analysis has revealed that Typica Mehorado is a varietal derived from Bourbon and Ethiopian Landrace. Nevertheless, Typica Mehorado is attracting the attention of many producers and roasters due to its delicate sweetness and complex floral flavor.
